Caciocavallo, literally means "cheese on horseback", it gets its name from the manner in which the cheese was traditionally  tied with a rope and hung over a wooden board to drain and age (and many times on a horse!) it is an Italian type of pasta filata cheese made out of sheep's or cow's milk, it is produced throughout Southern Italy and the Balkans.


Di Stefano Caciocavallo is made from cow's milk comes in four flavors: Traditional, Smoked, Lemon and Orange.


Production of the lemon and orange caciocavallo happens when the caciocavallo is being hand formed, and an entire organic orange or lemon is inserted into the cheese! While aging, the fruit will dry, passing its moisture to the cheese, giving it a delicate twist in flavor!  Perfect on cheese plates, salads, shaved on crostini bread, melted over flat bread or stirred into risotto! Best if enjoyed with your favorite white wine.
