My Grandfather was a chef so when I was younger I was always in the kitchen with him, so I guess I’ve known my whole life.
What are your hobbies outside of the kitchen?
I love going to the movies, kicking at the beach with my wife and kids and dogs, and going to museums. Any museum too I love them all.
Everyone remembers their first encounter with burrata. What is yours?
My first time tasting burrata was with Roasted Prawn with broccoli rabe, and lemon oil.
If you could make dinner for one person, who would it be?
My grandmother she died before I started my journey as a chef, she was from New Orleans so she knew good food.
What is your favorite dish to cook and why?
It always changes, right now though its seafood. Working in a steak house I’m always trying different cuts of meat so usually when I’m not at LA Prime I’m grilling octopus or roasting clams or at a raw bar.
