When did you know you wanted to be a chef?
I wanted to become a chef after baking with my Gran and my Mum growing up. I got a job as a dishwasher in a local restaurant back home in Dundee and from them on my passion for food blew up!
What are your hobbies outside of the kitchen?
My favorite hobbies are football, cheering for the Denver Broncos, soccer, cheering for my team back home Celtic fc and I love to skeet shoot.
Everyone remembers their first encounter with burrata. What is yours?
My first encounter with Burrata was at Nancy Silvertons restaurant Mozza in Beverly Hills. It was phenomenal, tangy and creamy. It was served inside a poached artichoke and topped with breadcrumbs.
If you could make dinner for one person, who would it be?
If I could make dinner for one person it would have to be Johnny Cash, I am a huge fan of his and he was a great person, excellent musician and a fine Christian.
What is your favorite dish to cook and why?
I don't have one exact dish I like to cook as I always like to try different products and try different techniques. Coming from Scotland my food is always seasonal and when I can, get the best possible wild product. If anything my favorite comfort food to make is my Grans Stovies which are Scotland's version of corn beef hash, but nobody can make them quite like her!!
