When did you know you wanted to be a chef?
I learned at a very young age while cooking in the kitchen with my Grandma Rossi. I used to stand on a chair and stir the sauce. I was always helping my mother out in the kitchen too.
What are your hobbies outside of the kitchen?
My family. My wife Dolly and two young sons, Maddox & Luca. I enjoy going to their baseball games and watching their ever-growing interest in hockey. My son Luca can tell you the name of each hockey team if you just ask him the city…CRAZY! I love to cook with them as well.
Everyone remembers their first encounter with burrata. What is yours?
Early in my career, I had the opportunity to work in Italy for a year. I went to the region of where my Italian Heritage lies in Puglia, Italy and we would eat it with freshly picked tomatoes, olive oil and crusty bread, or as a starter with prosciutto, grilled figs & wild arugula. I have been hooked ever since!
If you could make dinner for one person, who would it be?
I would love to cook for my mentors, the Chef’s that were influential in my growth in this craft. They would include Italian Master Chef, Bruno Barbieri, Gino Angelini & Andrew Sutton. Of course there would be some great wine involved!
What is your favorite dish to cook and why?
I am inspired to cook dishes based of the freshest, seasonal fruits & vegetables available. We have our own Heirloom Vegetable Farm here at THE RANCH on Edwards Ranch Estates and it’s exciting to create healthy, seasonal dishes from produce that is picked within hours of putting it on the plate.
