When did you know you wanted to be a chef?
Back when I was a little kid my grandfather and I would watch cooking shows together and have me help out in the kitchen for family gatherings.
What are your hobbies outside of the kitchen?
I enjoy spending time off-roading and enjoying the outdoors.
Everyone remembers their first encounter with burrata. What is yours?
Dining over a friend’s house about 10 years ago, walking over to the table and just taking a piece of grilled bread and scooping up burrata and letting it just fall onto bread topping it with slice salami enjoyed every minute. I notice from that point on that it is hard to stop till it’s all gone.
If you could make dinner for one person, who would it be?
I would have to say Glenn Danzig just so that I can sit there and listen to all the crazy stories of life on the road with that punk rock way of life seen through his eyes.
What is your favorite dish to cook and why?
I really enjoy cooking pizza, taking dough and having the freedom to put on it whatever you want on top. Then sliding that pie and into a pizza oven and just watching it cook before your eyes.
