August 3, 2015
Founder/Creator of Co+Lab popup dinner series, San Francisco
When did you know you wanted to be a chef?
I wanted to be a chef since I could remember. I was a curious kid and would follow my mom around the kitchen while she prepared dinner at home. I was her little sous chef that did simple tasks like steaming jasmine rice, washing bok choy, and peeling shrimp.
Everyone remembers their first experience with Burrata, what was yours?
I remember discovering Di Stefano burrata at a beautiful outdoor dinner in the middle of the woods. It was paired along side summer zucchini and heirloom tomatoes. I remember thinking I could eat this burrata forever. It’s so creamy and perfectly gooey. I’ve had a lot of burrata, but Di Stefano is by far my favorite
What are your hobbies outside of the kitchen?
I enjoy yoga, hiking, and anything that keeps me outdoors.
What is your favorite dish to cook and why?
I enjoy handmaking pasta. I like the idea of turning simple ingredients like eggs and flour into an impressive technique driven dish. Handmaking pasta involves delicate hands, precision, and is therapeutic! It reminds me of making dumplings with my grandmother as a child. There’s a sense of comfort when preparing and eating a handmade pasta dish.
