When did you know you wanted to be a chef?
When I first visited Europe at the age of 23 and saw the food markets of London and Madrid and the wonderful array of dishes cooked in Spain. The first bites of Spanish cooking had me on the way to always daydreaming of food and al the possibilities.
What are your hobbies outside of the kitchen?
Gardening, raising pigs and chickens. We now use our own farmed heritage pork in our restaurant . And of course, I still love traveling when I get the chance.
Everyone remembers their first encounter with burrata. What is yours?
In Italy, I was in Rome and encountered Burrata on a plate with tomatoes, olive oil and sea salt. I only needed my bread on the side to have an exquisite experience.
If you could make dinner for one person, who would it be?
I really like simple dishes. For a starter would probably do a little Crab Louie Salad with avocado added.
I like the fried seafood of Southern Spain a lot so probably would lightly bread some really nice butterflied shrimp, quickly fry it, and serve with lemons and a side of poppy seed cole slaw. I’d have an individual pineapple pie for dessert.
What is your favorite dish to cook and why?
I really enjoy making fresh made pastas/gnocchi as very few people do this anymore and the looks on the customer’s faces when they taste fresh made pasta or gnocchi is a great reward to see.
If I had to pick one dish I would say fresh pasta sheets cooked tenderly till silky and soft, then drained and tossed with fresh basil pesto. I had this multiple times in Portofino Italy and the dish really just amazes as it is so good but so simple.
