When did you know you wanted to be a chef?
It’s the only job I’ve ever had.I started at 16 years old and I haven’t stopped since.I’ve never had a position outside of the kitchen.
What are your hobbies outside of the kitchen?
Snowboarding, Skiing, Hiking, and Music. I love the outdoors and I play guitar.
Everyone remembers their first encounter with burrata. What is yours?
I didn’t try burrata until I lived in LA.
I can’t remember the set up, but I remember the cheese. My friend Mark kept saying the name, and I didn’t know what he was referring to. Finally, I asked him what he was talking about. Instead of a description, he just handed me a piece to taste. It tasted like the best fresh mozzarella that I had ever tried.
If you could make dinner for one person, who would it be?
I would make dinner for my wife because I always want to impress her.
What is your favorite dish to cook and why?
Simple pastas with slow cooked meats are my favorite to cook because they are the perfect example of food from the heart that is seasoned right and show refinement & technique in it’s most simplest form.
