When did you know you wanted to be a chef?
At an early age. Right out of high school I got into the business. This is the only thing I have ever done.
What are your hobbies outside of the kitchen?
I am a huge sports fan!
Everyone remembers their first encounter with burrata. What is yours?
My first encounter was as classic as they come, with tomatoes. The tangy, buttery flavor with sweet tomatoes. That's why we have gone with that combination on our menu.
If you could make dinner for one person, who would it be?
My wife!! I love the fact that she has come such a long way from being a very picky eater to really enjoying all different kinds of food.
What is your favorite dish to cook and why?
I love to braise meats. It allows me to spend time in the kitchen and go through
the process of building flavors. Short ribs are one of my favorites.
