When did you know you wanted to be a chef?
When I started eating out in Chicago while going to film school. Restaurants became like movies to me and I fell in love with food, farms and the story of ingredients.
What are your hobbies outside of the kitchen?
Reading cook books, eating, more eating and being in nature.
Everyone remembers their first encounter with burrata. What is yours?
Funny enough, it was in Rome, I made a brunch for some friends and I paired it with avocado, eggs and nduja. Took some crap from my Italian friends, but they went back for second and thirds. It's in their nature to complain.
If you could make dinner for one person, who would it be?
That is so tough, Bob Dylan, he is a creative genius. But I might like the opportunity to cook for Alexa Chung. But again this is such a tough question, I like the dinner for six more. Because then I could add for more, dead or alive.
What is your favorite dish to cook and why?
I love working with vegetables, but I love cooking pasta. People think it is so easy, but it is not when you are striving for perfection.
