When did you know you wanted to be a chef?
The first time I received a compliment about a dish that I had made.The feeling that I could impact someone through the food I was preparing was such an amazing and rewarding feeling that I knew that I wanted to do this for the rest of my life.
What are your hobbies outside of the kitchen?
I cook at home a lot which is where many of the ideas for the menu at Bottega Americano are created. I also have a rambunctious two and a half year old boy that I love so much. He takes up most of my time these days.
Everyone remembers their first encounter with burrata. What is yours?
Yes, it was about 15 years ago when my Sous Chef Doug at the Washington Inn in Cape May New Jersey, who lived and breathed Italian food, showed me burrata for the first time. He was so excited to share this cheese he had just driven four hours from home to Di Bruno Brothers in Philadelphia and back to get. From the moment we cut into the burrata we were sold to this creamy, versatile, tasty cheese.
If you could make dinner for one person, who would it be?
My grandmother.She passed away when I was a just a baby so I never got to know her or try her food.Everyone says she was such an amazing cook.We joke that I probably got my talent from her or maybe that my mother’s cooking was so bad that I had to teach myself.
What is your favorite dish to cook and why?
I really enjoy cooking vegetables these days. Right now I can’t get enough artichokes. Steamed and then grilled over wood, a little lemon, sea salt and a good aioli. That’s all I need!
