When did you know you wanted to be a chef?
F: Lucky for me, my mother submitted an application at the culinary school without informing me, I was 14 when I started going to culinary school. I am so glad she did it! They say that you either become a chef to feed yourself or become a chef so that you can feed others. As a cook, I think I am motivated by a little bit by of both. Honestly though, I’d rather be behind the scenes preparing a meal than actually sitting at the table eating it.
M: At 16 years old.I was helping a chef, a family friend at a charity event in my city. From that experience I knew it was my dream.
What are your hobbies outside of the kitchen?
F: First ,cooking! I love spending time with my dog, traveling, trying new restaurants, photography and following food blogs. I am always planning my next trip, even if they are only a dream.
M: Shopping online, fixing vintage vehicles, follow Francesca around with her crazy ideas ( I just installed a pizza oven)!
Everyone remembers their first encounter with burrata. What is yours?
F: My first burrata? I can't remember. Probably at 6 months! I am lucky because both my mother and grandmother were great cooks, and my passion and interest in cooking comes from them. I have so many great memories of us cooking together in a rustic kitchen full of joy.
M: My earliest food memory would probably be correlated to Christmas. Natale (Christmas in Italian) was always at my grandmothers house, as she was the relative with the biggest table!
If you could make dinner for one person, who would it be?
F: My grandmother and grandfather. They passed away too early and I would love to show them the chef I've become.
M: President Obama
What is your favorite dish to cook and why?
F: That is a very difficult question! It's like asking a parent which child is their favorite! I love everything about food… I can tell you what I don’t like!
snails (escargot), eel & foie gras. I just cannot cook without eggs and cheese, I think they are the best ingredients on the planet, and I cannot live without bread. I am just too Italian!
M: My favorite is a traditional recipe from my family: Milanese style Tripe. There is a lot of feeling and memory behind the dish, it's comfort food that warms up my soul.
