When did you know you wanted to be a chef?
I didn't necessarily know I wanted to be a chef but definitely that I wanted to be involved in executing well thought out dishes to people to eat. Ended up in the ownership side more so than the creative side, but still love the fact I am still able to stretch my legs a bit.
What are your hobbies outside of the kitchen?
Besides for eating and discovering new watering holes? - I do like physical activities. Boxing, golfing, and shooting are things I like to do in my free time. As well as ride motorcycles.
Everyone remembers their first encounter with burrata.What is yours?
Mine was in Vegas. Forgot which Italian restaurant I was at, but had an amazing burrata caprese. Possibly made fresh in house, creamy - perfect texture.
If you could make dinner for one person, who would it be?
I would love to make dinner for Anthony Bourdain.
What is your favorite dish to cook and why?
I love making Japanese food - very specific and detailed without too many ingredients to muddle taste. Also heavy stress on mastery of skill versus overdoing something.
How old were you when you started your first restaurant, the Alley?
I was 23 when I first acquired the Alley Restaurant - It had existed before me, but was in definite need of a little rehab and love.
You have opened several restaurants and even a concert venue since the huge success of The Alley. What made you decide to expand and offer such diverse cuisines at each location? Jack of all trades & dishes!
Being able to try new concepts and new cuisines for people is what gives me inspiration to stay in the business. Even if I can't work on the line and create new dishes everyday, I hope to create establishments that allow me to have that creative outlet.
