When did you know you wanted to be a chef?
I was 10 years old and had to make tea for my dad as part of my chore, he always said I made the best tea. I started attending culinary school and my lecturer said I made the best tasting food. I realized I had a gift that I can use to make people happy.
What are your hobbies outside of the kitchen?
Cycling, Music, Basketball and Gardening.
Everyone remembers their first encounter with burrata.What is yours?
There was a bar in Santa Monica, Los Angeles. They served a burrata panzanella, arugula, salad with green apples and black berries. It was so good that I still make it for guests with different variations.
If you could make dinner for one person, who would it be?
My Mom, she passed away before I became a Chef. She made the best dishes ever.
What is your favorite dish to cook and why?
Fennel pollen seared Seabass
over large white bean ratatouille, bloomsdale spinach and carrot ginger emulsion
