When did you know you wanted to be a chef?
ALESSANDRO: Being Italian I have been raised with a mom that used to cooking everything fresh - homemade pasta, bread and cakes. I have a bachelor degree in finance, but at the end I realized that food was my job!
MAURO: I have been wanting to be a pastry chef since I was at the elementary school.
What are your hobbies outside of the kitchen?
ALESSANDRO: I love playing with my 5 years old full of energy boy and reading (about food!!)
MAURO: I like riding my bike and watching soccer games.
What do you like about Di Stefano Cheese Mascarpone?
We like its texture, creaminess and structure.
If you could make dinner for one person, who would it be?
Carlin Petrini, founder and President of the Slow Food movement.
What is your favorite dish to cook and why?
Of course it’s desserts and in particular Tiramisu since we have moved here to NYC! Tiramisu is the emblem of the tradition of Italian dessert making, and we find it truly exciting to take this challenge by using local ingredients and show our American customers that it is totally possible to deliver an authentic Italian taste, staying local.
