When did you know you wanted to be a chef?
I started cooking at a pizzeria in Jersey when I was 13 years old. I knew as soon as I got into the kitchen that this was what I wanted to do.
What are your hobbies outside of the kitchen?
I am an avid musician, and actually started a “chef” rock band with my buddy, Duff Goldman, and some other guys.
I work out and enjoy boxing. I also enjoy hanging out with my wife and my dogs.
If you could make dinner for one person, who would it be?
As a chef I have finally found my stride over the last 5 years, and I lost both of my parents before that, so I would love to be able to cook a meal for them one more time.
What is your favorite dish to cook and why?
Bucatini cacio e pepe – to me this is the true test of a great cook/chef. It is such a simple dish, yet so easy to improperly prepare. For me, it’s the dish that keeps me on my toes!
