When did you know you wanted to be a chef?
When I was working as sous chef in Italy. I never looked back.
What are your hobbies outside of the kitchen?
I love biking.
Everyone remembers their first encounter with Burrata, what was yours?
It was 12 years ago, I actually had it with Mimmo Bruno the founder of
Di Stefano Cheese!
If you could make dinner for one person, who would it be?
My wife :)
What is your favorite dish to cook and why?
Pasta,pasta and pasta! I am 100% Italian, that explains it.
What has been your greatest accomplishment as a Chef?
Seeing the people I have served recognizing me in the kitchen. Before working for Di Stefano Cheese I was the executive Chef at Mi Piace in Pasadena, CA
If you you could give a piece of advice to your younger self, what would it be?
Cook with your heart!
