I always knew somehow, I just did not realize it until I was about 21.
I began working the kitchen as a dishwasher at 16 years of age. I did my undergraduate at the University of Wisconsin, Stout and received a Bachelor’s degree in Hospitality and Tourism Management. The advice I received from my father was to work in a field you enjoy, that way it’s not work, it’s a passion. After that advice, I completed my training at the Culinary Institute of America in Hyde Park, New York; I have been a Chef for 24 years.
What are your hobbies outside of the kitchen?
I love to fish, hunt and I enjoy the outdoors.
Everyone remembers their first encounter with Burrata, what was yours?
In New York at my Grandmother's.
If you could make dinner for one person, who would it be?
I cook for everyone except myself on a regular basis, without being selfish, the answer is ME.
What is your favorite dish to cook and why?
My favorite thing to cook is whatever is fresh and in season. Great cooking is about 2 things only, ingredients and technique.
