When did you know you wanted to be a chef?
I have always loved food and cooking but it was when I was recovering from a near catastrophic broken leg due to a bone tumor (a birth defect) in my youth that I really became interested in cooking. I did not walk for several years and during this time I could not leave the house, so cooking, cookbooks and cooking shows became my salvation from the boredom. When fully recovered I found my way into some great kitchens and the rest took care of itself. I ended up going to culinary school at CIA and have cooked coast to coast.
What are your hobbies outside of the kitchen?
Cycling and bike racing
Everyone remembers their first encounter with burrata. What is yours?
My extended family lives in Puglia where burrata is from. Early in my life and with my cooking career I was exposed to what the burrata in Puglia tastes like. The Di Stefano product most reminds me of the burrata I tasted for the first time with my family in Puglia.
If you could make dinner for one person, who would it be?
I’m lucky I get to cook for all sorts of people all the time. Cooking is really a great joy, its about transforming ingredients and composing tastes. It never gets old.
What is your favorite dish to cook and why?
I could never narrow that down. I cook seasonally so when artichokes, for example, show up each spring I get excited to cook with them. Then they go away, usually right when I am getting used to having them around. The great thing about cooking is that the next spring they will be back. It’s a process of constant re-discovery. Its inspiring.
What has been your greatest accomplishment as a chef?
My greatest satisfaction comes from leading a team in the kitchen to make great food. When everything is really working and the team are all outperforming it’s a very special thing to be a part of.
If you you could give a piece of advice to your younger self, what would it be?
Don’t sweat the small stuff and always think forward.
