When I was a 17-year-old high school student, I was working at the Japanese Ramen shop as a part time job. There I discovered my passion for cooking, and I chose to go to the Hattori Cooking School after graduating at my high school.
What are your hobbies outside of the kitchen?
My favorite hobby is eating tours, especially traditional Japanese foods and Sushi because they use and handle extremely good quality food .I respect them and study from their ideas for making good dishes and techniques.
Everyone remembers their first encounter with burrata. What is yours?
My first encounter with Burrata was at my restaurant, about 5 years ago when Burrata was first arriving in Japan. I used it for the first time at my restaurant. My first impression was that it looked tasty and different from Mozzarella. That Burrata came from Italy, but I like Di Stefano's creamy Burrata better than that.
If you could make dinner for one person, who would it be?
My Parents. I would like to make perfect dishes for them at my house, but I don't have a professional kitchen and I need one.
