When did you know you wanted to be a chef?
Spencer: I knew I wanted to be a chef when I started working my first kitchen job in Steamboat CO.
Alex: My Parents always cooked when I was younger so just watching them as I grew up, I knew I wanted to do work with food
What are your hobbies outside of the kitchen?
Spencer: Coffee. I am a huge coffee nerd. I also love to fly fish.
Alex: Mountain Biking, eating, just being outside.
Everyone remembers their first encounter with burrata. What is yours?
Spencer: When I was working at Luca D’ Italia here in Denver we were doing a dish that was a riff on an everything bagel. Burratta, house cured lox, and a everything bagel crumble. It was so good!
Alex: When I started working at Vetri in philadelphia, we used to get burrata and make eggplant terrines which were stuffed with burrata, really tasty but also really difficult to make.
If you could make dinner for one person, who would it be?
Spencer: Action Bronson. I am a huge fan of his music and his food show.
Alex: My Parents, (I know that’s not one but they are basically one) even though I cook for them all time, they are always honest about whats good and works and whats not.
What is your favorite dish to cook and why?
Spencer: My favorite dish right now is a simple panzanella salad with good sourdough. During tomato season, there is nothing better!
Alex: Fideau, its based upon layering flavors and when done right it is one of my favorite things to eat also.
What has been your greatest accomplishment?
Spencer: My greatest accomplishment as a chef has been creating this awesome team around me. I am so lucky to get to work with such wonderful people everyday.
Alex: Just opening a restaurant and watching it grow. It’s a crazy thing to be apart of.
If you could give a piece of advice to your younger self, what would it be?
Spencer: Don’t be afraid to always explore opportunities.
Alex: Spend more time in other countries. Working, cooking, eating, living life.
