When did you know you wanted to be a chef?
I graduated undergrad in 2013 with a degree in opera performance, and after 4 years of making music from 7am-10pm, all I wanted to do was cook. I put my music books away and found a spot in a fine dining restaurant, the rest is history.
What are your hobbies outside of the kitchen?
I’ve been getting into photography, and honestly it’s helping my food plating skills, thinking in terms of balance, color, and depth. Also, my fiance and I own kayaks and we love to get them out on the water as much as possible!
Everyone remembers their first encounter with burrata. What is yours?
Smashed over crusty baguette with local, raw honey, ripe figs, and there was no turning back. I’ve been hooked ever since.
If you could make dinner for one person, who would it be?
I would cook for great-grandmother. So often when I cook for my dad, he says it reminds him of something his grandmother would make on a Sunday, and that she would be so proud of my skills. I love hearing things like that, and food is such a special part of my family, so I’d love to feed her.
What is your favorite dish to cook and why?
I love making breakfast. I always joke and say I love sleeping because it is a time machine to breakfast, but I really mean that! Breakfast is such a special time of the day, and such a luxury when most people are lucky enough to grab a coffee running out the door on their way to work. When I have time to make a beautiful breakfast, I really enjoy it, it’s good for the soul.
What has been your greatest accomplishment as a chef?
I’ve been lucky enough to recipe develop for some amazing companies, but I have to say, Working with “Feeding America” at the Cleveland Food Bank for an influencer event was pretty amazing. Lucky to be able to bring awareness to my platform on Instagram!
If you you could give a piece of advice to your younger self, what would it be?
Great things come to great people, who work incredibly hard.
