I knew when I was 18 years old. I come from a family of chefs, my great grand father was a chef, and my parents managed a wedding hall. When I was a child I used to clean the kitchen and cook roasted meat, naturally I wanted to become a chef too.
My father loves the Japanese cuisine, and offered two menu options; Japanese and French. The wedding hall brought people from all over the world including Italy. My mom started learning Italian so she could cater to our Italian guests, and I felt connected to them and the country. When I went to cooking school, I chose to take Italian cooking class because of my love for Italy, especially Sorrento. After the class, I decided i wanted to become and Italian chef.
What are your hobbies outside of the kitchen?
Since I was a kid I always loved to ride my bicylce.
I usually go to lakes around Mt.Fuji, which is a 6 hour trip. It is good for releasing stress.
I own 10 bicycles, and I used to participate in a vintage bicycle tournament.
I also like gardening. I take care of the landscape in front of our restaurant, La Bisboccia
Gardening is a lot of work,but flowers have a healing power on me.
I especially love the flowers that bloom many times a year.
Everyone remembers their first encounter with burrata, what is yours?
I ate burrata for the first time in 2010 in our restaurant.
It felt more tasty than mozzarella.
Why do you love Di Stefano Cheese burrata?
It is very delicious!
I like the thin mozzarella parts and milky, clean taste.
My customers love it as well!
If you could make dinner for one person, who would it be?
My daughter, even though she is still a baby.
I would like to introduce her to Italian food, and cook white sauce vongole for her!
If you were to take another cooking class, what would you choose?
Japanese food because Japan is my country.
Sometimes I feel strange being Japanese and cooking Italian foods.
Also, I would like to try French and gastronomy; just to try something new.
