1. When did you know you wanted to be a chef?
I was going to school in Santa Barbara and all I could do was sit in class and think about what I was cooking for dinner. It’s completely consumed me.
2. What are your hobbies outside of the kitchen?
I like to read, spend time with my nieces and nephews.
3. Everyone remembers their first encounter with burrata. What is yours?
I ate it for the first time at Nancy Silverton’s Pizzeria Mozza in 2006
I had no idea what it was really, but it was served on a pizza and it really caught my attention. I couldn’t describe the flavor at the time, just the creamy texture.
4. If you could make dinner for one person, who would it be?
5. What is your favorite dish to cook and why?
I don’t have a particular dish, but I love to cook vegetables. I could go with just cooking vegetables for ever and never even think of any proteins.
6. What has been your greatest accomplishment as a chef?
Working hard and really seeing myself grow and become a better chef and person. I also have a huge sense of pride when I see people that have worked with me become successful and become chefs.
7. If you could give a piece of advice to your younger self, what would it be?
Stop working so much and enjoy your life a little.
